Small goat farmers in the Belmont region take great care of their herds the old-fashioned way and the result is exceptional milk for cheese making. Once the milk is harvested, it is pasteurized and cut into small curds. The resulting curds are pressed into small logs, which are then hand sprinkled with garlic and herbs to make the delicious cheese many have grown to love.

Goat cheese has a distinct bright white color along with a soft and slightly crumbly texture. It has a strong, zesty flavor, which pairs well with crisp white or young red wines such as Chardonnay or Pinot Noir. Sauvignon Blanc will also pair well with this assertive cheese.
