Did you know that sushi isn’t actually raw fish? The associates responsible for sushi at Publix let us in on the details. “Sushi” refers to the vinegar-seasoned rice used when making rolls. However, the sushi we know today is much different than its original form. The concept originated in Southeast Asia around 2,000 years ago due to the need to keep seafood fresh without refrigeration. Fish was wrapped in fermented rice, which prevented the fish from spoiling. Edomae sushi is what you’ll find in most restaurants and supermarkets today as the combination of cooked rice and seafood.
