Cinco de Mayo, or the fifth of May, is a day when we get together to celebrate Mexican culture, food, and drinks.

Cinco de Mayo celebrates the anniversary of the Mexican army’s win over France in the Battle of Puebla during the Franco-Mexican war in 1862. Despite what many think, it is not Mexico’s Independence Day. While Cinco de Mayo is not widely celebrated in Mexico, it has become quite a festive time here in the U.S.

As you prepare to celebrate this year, we say it’s time to enjoy a few Mexican-inspired dishes in addition to our beloved tacos and burritos. Don’t worry, the margaritas can stay! We just want to offer you a fresh take on a familiar celebration. Here are a few ideas to get you started.

Get your Cinco de Mayo festivities started with a first course that includes Tortilla Soup. Tortilla soup is a delicious blend of onions, spices, and a host of other scrumptious ingredients, topped with crunchy tortillas. This soup frequently contains chicken, but for a meatless option, try swapping out the chicken for your favorite veggies and beans.

For the main attraction, serve your guests delicious Chicken Mole with Fiesta Corn and Rice. This is an entrée that combines unsweetened cocoa powder and chili powder for a smoky flavored sensation. Yum! Lasagna Mexicana is another great dinner choice, and you definitely can’t go wrong with our Meatball Enchiladas. If you have picky eaters at home, try making our Chicken Fajitas with Mexican Grilled Corn. It’s fast, easy, and sure to satisfy even the most choosy eaters .
